Which is the most appropriate it?

 

E.g. Hundreds of _____ spectators demanded their money back when the match was cancelled.

All three adjectives can be used, but I would use 'angry' because it's the strongest and matches the word 'demand' better.

The other two are weaker:

annoyed = slightly angry
upset = unhappy, disappointed
